Good morning!
I was up before the sun today puree-ing my heart out. Ina now has food to last the rest of the week.
As I was cooking oats for her I realized that I haven't told you guys about my new favorite oat recipe - these HEALTHY cookies.
(My breakfast yesterday from my prepped fridge - already hard-boiled eggs, already cut watermelon, and my "cookies.")
Except, I really shouldn't call them cookies because I eat them all the time (breakfast, mid-morning snack, mid-afternoon snack, dessert, before bed..) and when I say, "I have eaten 10 cookies today," I sound like I need an intervention.
And, my mom isn't a fan, but I am convinced this is because she was expecting them to taste like a chocolate chip cookie, which they don't. No matter how much love I pour into the batter I can't turn oatmeal and bananas into butter and sugar.
Sorry Mom.
However, these "bites" are simple, convienent, healthy, and versatile. And only 1 WW PP a piece!
If you make them, go ahead and double the recipe. Also, although they work with yellow bananas, they taste much better with spotted brown bananas - the trick is having the patience to wait a few days!
If you try them, let me know what you think! Am I the crazy one?
Lunches have been fruit + cottage cheese. Yes it is summer. No I am not pregnant.
Dinners have been hit and miss around here. My grandma is still in the hospital, so we visit her a few nights a week, which doesn't leave much time for cooking food (hence the 4:30 am puree-ing). I am trying my hardest to avoid the drive-thu, so we have been hitting up Chipolte and Applebee's. Grandma comes home this week and although it is so nice to see the family at night I am excited to return to our regular (not-so-regular) schedule.

Made my first batch tonight with walnuts! They were awesome and my husband loved them too! Can't wait to mix up the add ins- chocolate chips!! Thanks for posting worthwhile recipes!
