My employer is doing a vegetable challenge. Eat 2 servings of fruit and 3 servings of vegetables 6 days a week for a month and I get a $20 giftcard.
Easiest $20 I will ever make.
As I already eat lots of vegetables, I am on overload. I had spinach for all three meals yesterday.
Breakfast - another green monster smoothie.
I know that may look like a lot to you, but it wasn't after I spilled half of it on the carpet.
Just in case you were wondering, spinach does stain the carpet green. (Last night when we were going to bed Dan said goodnight to the stain. I asked what he was doing and he said, "Saying good night. I imagine that stain will be part of the family for a while." Hmmpphh.)
I added a handful of spinach to my mixed greens for lunch - with a stuffed pepper, carrots, and a pear for snack.
Dan (aka turkey burger master) chopped up some spinach to made some feta and spinach turkey burgers.
Served with a little bit of mayo, sweet potato fries and roasted green beans.
I dipped into the cereal box for dessert - pb cocoa puffs that were oh so good.
Ina and I busted out 3 miles after work. Afterwards we recorded a video showing off her newest trick.
Two notes -
1. We are pretty lose with the word "trick." Give us a break. She is 5 months old.
2. Please excuse the sweaty hair - it was humid out!
