After Dan and I finished our dinner on Tuesday night he gave me a mischievous look and said, “Let’s go get ice cream.” Before I knew it we were at the grocery store standing in front of the Blue Bell section in the ice cream isle. We stood there for at least 5 minutes debating which flavors to get and finally decided on Pralines, Pecans, n’ Cream and Strawberry Cheesecake.
I think we made pretty good choices, but this made me wonder if I was missing out on an even better flavor. Dan and I have now challenged ourselves to try every flavor of Blue Bell ice cream this summer. I know – super tough challenge.
But, to make things more interesting, I am going to make a deal with myself. I can only have Blue Bell for dessert if I run or walk at least 3 miles that day. I know I shouldn’t be rewarding myself with food, but motivation is motivation and I need some. Plus the calories burned during 3 miles is about 1.5 servings of ice cream, give or take, so even Steven, right? (I am probably going to look back on this post when I am trying to lose all my baby weight and think “Really Racheal? What made you think that was a good idea?”)
Protein Packed Day
I had so much energy yesterday and soon realized it was probably because I added a lot of protein to my diet.
Breakfast – 2 egg, pepper, onion, tomato, and cheddar scramble with hot sauce and cantaloupe
Lunch and snacks: – leftovers from the night before, grapes, yogurt, and cottage cheese with tomato (From our garden! So proud!).
Appetizer – not so friend okra (click *here* for the recipe)– this was good, but you have to REALLY like okra. This okra was from my grandpa’s garden and the seeds were so big they added an interesting texture.
Dinner – a childhood favorite – sour cream noodle bake (click *here* for the recipe).
I ran 3 miles while reading again, but really the only thing on my mind was the Blue Bell I would get after dinner.
