Early Meeting

I have an early meeting today, so no time for chit-chat. Smile

Yesterday’s food was wonderful.  For breakfast I treated myself to some banana protein pancakes following this recipe

The highlight was the tsp of legit Vermont maple syrup from my foodie penpal box a few months ago. 

Lunch was the last of Monday’s leftovers with snacks of fresh green beans and fat free Greek yogurt with honey apple butter and cinnamon.

Dinner was Thai green curry chicken.  I didn’t follow a recipe – just sautéed a mixture of veggies with chicken breast and added a can of light coconut milk, green curry paste, soy sauce, and sriracha.  This dish is quick, easy, flavorful, and a wonderful way to get in tons of veggies.

Served on a bed of Jasmine rice – perfection.

Dessert was Blue Bunny Bunny Tracks ice cream that I ate so fast I didn’t take a picture of it.  (9)

Run

I wussied out at 3 miles again. Today I am running 4. End of story.
