Taste of Summer

Happy Easter!  I thought we might have some Easter baby birds, but no such luck.  Look at Mamma Bird giving me the stink eye. 


Are there certain foods that remind you of a certain place or time?  One bite of cottage cheese salad and I am at my grandparents’ house in the summer, running around with no shoes on, playing hide and seek with my cousins until dark. 


My grandma made this salad for every summer lunch and dinner to accompany whatever feast she was creating.  She used the fresh tomatoes, peppers, and onions from my grandpa’s garden, therefore, when I think of summer, I think of this salad. 

I do realize that we are nowhere near summer yet, but I thought I would share this super simple recipe so that when you do get your hot little hands on a garden fresh tomato, you can maximize its taste benefit. 

For one container of cottage cheese (If I am making it for myself I use 0% or 1%, Grandma uses 4%.), chop up 1 tomato, 1/2 green pepper, and  1/4 red onion. 


The smaller the better.  Then add 1 T of mayo (I use the real thing).  Salt and pepper.  Mix. Done. 


Instant summer.

Last night we ate summer in a bowl along with grilled steak for dinner at our friend Brad’s house. 


Appetizers were little shrimp with homemade cocktail sauce. 


Dessert was another chickpea creation.  I used Snack Girl’s recipe to create chocolate chip cookie dough hummus.  You can eat it with apples or graham crackers.  I also thought it tasted great off the spoon. 


After dinner we grabbed some wine and headed for the hot tub. 


Filled with little footballs.  Don’t ask.


Other Eats

Breakfast was banana bread protein pancakes following *this recipe*. 


They were delish- tasted more like banana bread than pancakes.


Munched on some carrots while doing the whole work thang.


Lunch looked a lot like yesterday except I switched in grape jelly for strawberry and added ketchup to my brussel sprouts.


Dan and I munched on popcorn while watching the Royals kick some butt. 



We have had this box of Boy Scout popcorn sitting it our pantry for over a year, but I never touched it because it didn’t have the words “Low Fat” on it.  I just assumed it wasn’t worth it.  I later found out the NI isn’t that bad and it is super tasty.  Especially with garlic salt.  I need to find a Boy Scout soon, because that box is running out. 


Treadmill 5K.  I had every intention to come do an arms workout after, and then just didn’t.

Weekly Points (49) – Mon (2) – Tues (11) + Wed (1) – Thurs (2) - Friday (9) –Sat (31) = –7 Darn it. Looks like it is going to be a skinny Easter for this girl.

2 tsps of oil – only 1 tsp

limit sugar and alcohol – not even close
