Hello! Sorry for the late post. I am currently en route to North Carolina and with a 3 a.m. wake up time in order to make my flight, there was no extra time for blogging.
I will be in North Carolina for the next two weeks and my schedule is a little hectic, so I apologize in advance for the sporadic posting.
I am so excited for the next two weeks ahead. I start out in Chapel Hill, where I am giving a lecture at the pharmacy school tomorrow. Then on Thursday I am driving to Asheville, where I will stay with Sarah (my best from from high school). She is doing her medical residency there, but was able to get the weekend off to show me around town. Next Monday I will drive back to Chapel Hill where I am going to try to finish up an old project I started during my fellowship two years ago (major procrastination). Finally, Dan will fly in for the weekend so we can go to a wedding of one of the other people I did the fellowship with.
Whew! Super busy. And on top of all that, I am going to work my regular job – from home – or whoever’s home I am in at the time.
I am looking forward catching up with old friends for the next two weeks.
Run
Courtney and I ran 3.5 miles with interval work built in. This was my first time changing my speed while not on a treadmill, and I have to say that I am a fan. Courtney would just randomly say, “for the next minute, let’s run at a faster pace.” It was even better that I didn’t have to think about it.
Eats
Breakfast was more breakfast cookieish glop – still delish.
I worked from my home yesterday – and made myself a kale and feta omelet for lunch.
I snacked on some zucchini left over from the night before.
Before we left to go to the Royal’s game I had a few bites of frozen yogurt. Straight from the carton – because I am classy like that.
On the way to the game Dan and I stopped by Jimmy John’s to pick of some sandwiches for us and Jessie and Cody. I ordered a pickle to munch on during the drive and chugged 1.5 L of water. I might return when I get back home just to buy a bunch of pickles.
Jessie ordered the Veggie sandwich, so I did too. I thought the avocado spread sounded good.
I didn’t look up the nutritional information until today. Ouch. Kauffman is very disappointed in my food choice.

Whole wheat when possible; 100 oz of water; Multivitamin; 2 servings of dairy;5 servings of fruits and veggies; 2 tsps of oil; limit sugar and alcohol; lean protein – didn’t do so hot on my GHGs yesterday.

ReplyDeleteI had a reality check with Jimmy Johns about a year ago...ouch! Yummy sandwich...not so yummy calories.
