Happy St. Patrick’s Day!
I am hoping that the luck of the Irish will follow me right to the Pai Gow table.
Why is it that the plane ride to Las Vegas always seems like the llloooonnnnggggest 3 hours of my life?
After some pretty smooth travel, Dan and I made it to Las Vegas late last night. We immediately met up with the Nybergs for some downtown action.
Oh, and some gelato.
I will be too busy counting cards in Vegas to count points, but that doesn’t mean I am going to get all wild and crazy – at least with my food. Here is the plan:
- Run 2 out of the 3 days I am here. I have been to Vegas countless times in my life. Every single time I pack running clothes, but I have not once run in Las Vegas. Not once.
- I packed lots of fruits / veggies / snacks for two meals out of the day. For my “main meal” I will still try to get as much nutrition as possible, but I look forward to trying some new food. Thinking about hitting up FireFly. Anyone been?
- Drink a glass of water in between each drink that, ahem, isn’t water.
- Win enough money to afford a personal trainer and chef so I don’t have to worry about this stuff anymore. Hehehe.
Friday = long run day = two breakfasts. Breakfast came early yesterday morning. I woke up at 2:45 to a little voice crying, “Rae Rae.” Kauffman knew I had a lot of stuff to get done before my flight out of KC.
My first breakfast was breakfast cookie cereal which featured 1 banana, 2 tbs of Better’N Peanut Butter, and 1/3 C oats mashed together and topped with 1 cup of skim milk.
A few very important animals joined me for breakfast. I was honored. You have no idea how hard it is to get some time with them.
My second was an entire baby watermelon enjoyed outside while listening to the morning. I needed the electrolytes. Don’t judge me.
For lunch I roasted some brussel sprouts and finished up some leftovers from the night before.
Dinner was quickly eaten in the economy airport parking lot. If you live in Kansas City and you are going to the airport, do yourself a favor and stop by Tasty Thai. You won’t be sorry. This time I ordered Pork Laab and spring rolls.
Mmmm…..so much better than the Burger King at the airport.
I planned on running 10 miles yesterday morning, but that didn’t happen. I just wasn’t feeling it. By 2.5 miles I wanted to quit. I managed to get to 7.5 before I called Uncle. Next week – watch out – I am coming back in full force.
