I wish I could write a blog only about how much I love this salad. I went on a hiatus, because I thought I would get burnt out on it, but I don't know how that would be possible.
For the original recipe - click *here*. The only modification I make is a chicken burger instead of a veggie burger. If you don't like goat cheese, feta works well too.
I had a dinner planned, but when I got home the tahini sauce, goat cheese, and srircha were callin' my name. How could I resist?
So, I nixed the vinegar and put the toppings on a pita split in two. Salad of champions - taco style.
Please go to the store and buy the ingredients for this salad. You won't regret it!
Breakfast was a kale and swiss omelet. I just seared up some kale in the skillet before adding the eggs. It was wonderful.
When I got home from work I popped some brussel sprouts in the oven to roast.
Perfect afternoon snack.
Dessert was a two parter while watching the drama that is The Bachelor.
I also did some baking last night and enjoyed a few licks of the batter bowl (2).
Yesterday morning it looked so beautiful outside. So, even though my phone said it was 28 degrees outside, I busted out my running tights, gloves, and jacket for a brisk 3ish mile run. It was wonderful and so refreshing.
