Greetings from Vermont

No, I am not in Vermont.


But, I did receive a foodie pen pal package from Vermont, more specifically, from Christa over at Livin’ a Little Life!  Christa is a WW leader and a runner – this is a match made in heaven folks. 


I told her I wanted something local, and boy did she deliver!  I don’t think it gets any more local than maple syrup!  Can’t wait to bust that out on some pancakes. 

I’m also super excited about the salad dressing – planning on adding that to my SuperPower Greens soon!


I have already put the dark chocolate bar and the syrup to good use, by making The Fitnessista’s Amazeballs


I slightly modified the recipe: into a food processor I put 1 scoop of chocolate protein powder, 1 tbs of almond butter, 1 tbs of fig butter, 2 tbs of shredded coconut, 1 tbs of syrup, and 1/2 of the chocolate bar, ran the processor for about 1 minute, then rounded into 4 balls. 


Oh my.  I planned on saving these for my pre-workout fuel in the morning, but there was no way that was happening.  I ate two as soon as they came out of the food processor and two before I went to bed.  Sigh.

I won’t make these again unless I have 12 points to spend. Hehehe.

Other Eats

So happy that parfaits are back in my life.


Lunch was leftovers from the night before.  The hash needed a little more flavor, so I added some mustard and rooster love. 


Dan and I ended up at a new-to-us restaurant Fresh Grill.  They won us over with the picture of the salad and their outdoor seating.


The menu looked awesome and I could not decide on what to order.  I finally went with the half salad half sandwich combo.

The food was great.  I plan on returning soon – maybe for their breakfast or their yogurt bar.


Thursday = sprint day = 3.3 miles in 30 minutes = one tired Racheal
