But, I did fill my day with some particularly colorful fruits and veggies.
peppers tomato sauce
peppers sweet potato carrots
peppers bananas
spinach green beans
blueberries
eggplant
Yes, I am allowed to combine blue and indigo. I did it in elementary school with my Crayolas, and I am doing it again now. Deal with it.
I didn't run in the morning, so I had a few extra minutes to prepare a breakfast.
Lunch was a combo of left overs. The roasted green beans were even better the next day.
For dinner, I made one of Emily's newest recipes-spicy sausage and eggplant spaghetti bake (click *here* for the recipe) . This was absolutely delicious and worth the extra steps. I made a few modifications (decreased the parmesan cheese by 1/4 C, switched out spaghetti for elbow macaroni, and switched out marinara sauce for plain tomato sauce) only because of what I had on hand.
Run
I knew that I shouldn't have delayed my run until after work, because when I walked in the door it took every ounce of self control I had to go upstairs and lace up my Nikes instead of sitting on the couch and catching up on my DVR. I only managed to squeak out 3 miles while watching Glee, but it was better than the alternative.
Thought for the day
