Grilling in January

Last night I had to work, so dinner was courtesy of two of my favorite fellas.

Joe (as in Trader),

and Dan.

I don't think we have ever grilled in January, at least comfortably, but I love it.  I am soaking up every last bit of this beautiful weather!

Those chicken burgers were so yummy and packed with flavor!  I ate mine plain without a bun and it was very tasty.  Dan ate his with a potato bun, a slice of cheese, and a generous dollop of mayo.  His was tastier.

Dinner: chicken burger (3) and spaghetti squash (4)

For a side I (semi-successfully) tried to duplicate the ginger spaghetti squash we tried at Bonefish Grill a few weeks ago.  I mixed together about two T of chopped ginger, one T of butter, and 2 T of honey and drizzled the mixture on top of the cut in half and de-seeded squash.  Then I roasted it at 375 for about 45 minutes. It was okay, but felt like it was lacking something.  Back to the drawing board.

Dessert was another boring bowl of cereal.  Sigh.  No worries, tonight,I have something exciting up my sleeve!

  1. Your rooster is crazy cute! The spaghetti squash sounds tasty, I keep saying I'm going to try it but haven't.

    1. Thanks! It is really good. It does look like spaghetti...but don't be fooled. It doesn't taste like spaghetti. :)

  4. My favorite guy grilled for me a few weeks back. It was awesome! But we had to have winter coats on because we're in Michigan. It's definitely more mild this winter, but not warm enough to be in shorts! (Jealous)
