I was running a little late this morning, so I didn't get a chance to write until after work.
I woke up this morning to let the dogs out and saw:
SNOW!
I always think of this part of White Christmas when I hear the word "snow."
After staring out the window while sipping a cup of coffee, I glided through 5 miles on the treadmill while watching Castle. Did anyone else see it? It was on the verge of scary...I even yelped a few times which scared the dogs!
My smile quickly went away when I got to the highway and was stuck in bumper to bumper traffic. Oh well, it gave me a chance to have a nice long phone chat with Grandma June while she was on her way to the dentist. :)
Yesterday I didn't get too much done on my ridiculously-long-gone-all-weekend-and-didn't-get-a-chance-to-do-anything list, but I did plan out our meals and my runs for the week (on the back of my grocery shopping list).
Because I was running late this morning, I threw together one of my favorite last minutes lunches: lightened up buffalo chicken dip

One of my favorite party treats is fully loaded buffalo chicken dip, but I can hardly justify all those calories for lunch, so I invented a lightened up version. In a microwave safe bowl I throw (literally because I am running late):
- one can of chicken breast (the kind from CostCo is the best)
- 2 wedges of Laughing Cow cheese
- ~1/4 cup of plain fat free Greek yogurt (I usually use Fage or TJ's).
- ~ 2 T Frank's hot sauce
When lunch rolls around I microwave it for ~2 minutes. Add some carrots and 34 degrees crisps and you have a protein packed lunch with a punch. :)

This morning I threw some stuff in the crock pot in an attempt to mimic Brad's Jumbo Gumbo for dinner. When I got home I put some rice in the rice cooker and wam-bam-thank-you-mam, dinner is served.
Have a wonderful evening! I am determined to wake up tomorrow morning and run, instead of putting it off until after work, like I did last Wednesday and the Wednesday before that.
